I'm looking into a used 2014 mini myself as a media machine connected to our tv and an external hdd with all of our home videos and pictures on it. It should be noted that the PRAM battery is a BR2032, which offers stable voltage over time until it dies, whereas a CR2032 loses voltage gradually over time, possibly causing CMOS and other errors. If you decide to change the drive yourself, I would advise changing the PRAM battery as well, since you'll have everything opened up. I followed the OWC videos to change the drive myself, and with patience it was not a difficult job. I used to have the (still in demand) 2012 i7 Mac Mini with 16gb ram, and I'm certain I'd still be happy with its performance today if I still had it.

While I have bought OWC SSDs in the past and they are fine, be advised that current consumer level SSD offerings from Crucial and Samsung are often less expensive. But if the Mac is to be used for processing large files, the cache may not hold current data long enough, and then it becomes no faster than its hard drive portion. A hybrid drive is fine for oeprations where small data sizes are involved, because they are small enough to fit in the SSD cache portion of the drive. I would not do a half measure with a hybrid drive, since SSD costs have come down enough. For example, your boot time will probably be greatly reduced, and in general the SSD will make the Mac feel more sprightly and responsive.

Technically, the SSD will only speed up operations that depend on disk I/O, so the SSD cannot speed up programs that depend on how powerful your CPU or GPU is. I have a 2011 MacBook Pro, and putting in an SSD extended its life for a few more years. The old 5400 RPM hard drives are so slow that an SSD will make a huge difference. If, however, the drive is going to host, say, a large Lightroom catalog, an SSD will offer a substantial performance advantage. If expanding storage is of value you to and your budge is limited, a hybrid drive can be a good alternative to an SSD.

But, as a daily driver it'll feel like a new Mac.
